Casserole with Koran fish / Tave me peshk Korani

Pogradeci my final destination for this summer holidays.
I have wanted for years to visit the city but for different reasons I hadn't. I was fascinated by this southeast city where natural beauty culture and culinary traditions stay intact. One of the dishes that I decided to cook based on the original recipe, with the help of my mum is baked Koran fish in the oven. Hope you like it. Here are some information about this fish:
 Koran fish (Salmo Letnica) is an endemic specie located at the Oher lake which is ond of the oldest lakes in the world. The widest part of it 
belongs to FYROM and the other part to Albania (Pogradec city). This is the fountain of the Prespa lake and the Drilon park near the Tushemisht touristic village. Another small wonder of Albania.

Ingredients:

  1. 1kg Koran fish
  2. 2 onions
  3. 2 tomato
  4. 2 carrot
  5. 2 red bell pepper
  6. 1 yellow bell pepper
  7. 1 green bell pepper
  8. 1 lemon
  9. 2 bay leaf
  10. 20 gr fresh parsley
  11. salt
  12. pepper
  13. 1 coffee cup with olive oil
Preparation:

  •  Clean the fish and cut it in some small pieces. 
  • Salt them and fry a little bit until gold 2 minutes each side.
  •  Then start cutting the vegetables. Peal the onions in stripes. The same way cut the bell peppers. 
  • Cut the tomatoes and carrots in cubes. 
  • In a baking pan make a layer with onions, carrots, bell peppers and tomatoes. 
  • On top put the fish and on top of them add the other part of onions, peppers and some tomatoes in circles. Add also some bay leaves and fresh parsley In the end add olive oil, salt, ground pepper.
  •  Cover the pan and put it in a preheated oven at 200C for 45min. 
  • Then uncover the pan and put it again in the oven for another 15min until it has a golden layer on top. Serve warm.

Pogradeci ishte destinacioni im i fundit i pushimeve verore te ketij viti. 
Kisha vite qe deshiroja ta vizitoja kete qytet por per arsye te ndryshme nuk kisha gjetur kohe. Mbeta e mahnitur nga ky qytet juglindor ku nderthuret bukuria natyrore me kulturen dhe gatimet fantastike. Nje nga gatimet qe vendosa ta rigatuaj bazuar ne receten origjinale, me ndihmen e mamit tim eshte Tave peshku me Koran. Shpresoj tju pelqej. Me poshte po vendos pak informacion mbi kete peshk: 
Peshku i Koranit(Salmo Letnica) eshte nje specie endemike qe gjendet vetem ne liqenin e Ohrit i cili eshte nje nga liqenet me te vjeter ne bote. Mosha e tij llogaritet te jete 2-5milion vjet. Pjesa me e madhe e tij i perkete Maqedonise perkatesisht qytetit te Ohrit dhe Struges. Pjesa tjeter i perkete Shqiperise( qytetit te Pogradecit). Ne kete liqen buron uji qe vjen nga Liqeni i Prespes dhe nga burimi i parkut te Drilonit prane fshatit turistik te Tushemishtit. Nje mrekulli tjeter e vogel ne Shqiperi.

Perbersit:
  1. 1Kg peshk Koran
  2. 2 qep
  3. 2 domate
  4. 2karrota
  5. 2 speca te kuq
  6. 1 spec jeshil
  7. 1 spec i verdhe
  8. 1 limon
  9. 2gjethe dafine
  10. 20gr majdanos i fresket
  11. Krip
  12. Piper
  13. 1 filxhan kafe me vaj ulliri


Pergatitja:
 
  • Pastrojme peshkun dhe e presim ne disa pjese, te cilin e kriposim dhe e skuqim pak ne tigan deri sa te marre ngjyre te arte. 2 minuta ne cdo ane. 
  • Me pas fillojme dhe presim perimet. Qerojme qepet dhe i presim ne fije te gjata. Ne te njejten menyre presim edhe specat. Ndersa domatet i presim ne kubik se bashku me karrotat. 
  • Ne nje tave vendosim ne fillim shtresen e pare me qep me pas hedhim karrotat,specat dhe domatet. Persiper vendosim peshkun dhe me pas siper tij hedhim qepe dhe speca te ngelura dhe disa feta te holla domate te prera ne menyre rrethore gjethet e dafines dhe majdanozin e fresket.
  •  Ne fund i hedhim vaj ulliri kripen dhe piperin e mbulojme taven dhe e fusin ne furre ne 200C per 45min, me pas e zbulojme taven dhe e fusim perseri ne furre per 15min qe te marri pak skuqje persiper. 
  • Serviret e ngrohte.
